This is how I make one of our favorite foods!
A box of collard greens sitting on my counter waiting for attention.
The center spines have been cut out, and several leaves are stacked ready to be rolled up for slicing.
Making thin slices...
Stir-frying the leaves with some seasoned hamburger...
Simmering with tomato sauce! Shall we have some with rice for supper?
And here's what I do with the leftovers...Now I am ready for some winter day when I just don't want to cook!
(I only showed you one pot, but I made two of them at the same time. That's why there are so many leftovers!)

Oh, this is making my mouth water! Why can't you live next door to me, so I could innocently (or not so innocently) pop over just when you happen to be putting the finishing touches on your collard greens!
I'll probably dream about collards tonight.
By the way, I just noticed the beam of light shining down on Coral's head in her picture. She looks like she's landed there straight from heaven.

I noticed that beam of light in Coral's picture, too, and love it! If I had been trying to get it there on purpose, I'd still be working on it!
Well this looks truly delicious! I would have to say I would prefer mine to be fried with sardines in tomato sauce, though! Or perhaps with chicken. Somehow the ground beef doesn't fit in the imagination of my taste buds because we never, ever, ever had beef let alone GROUND beef in Africa! We DID have corned beef in a can, though, and that also seems to fit with collards to me.
Oh, C-A, you are forgetting the deer meat which was our "beef." I guess I'm not much of a sardines lover!! Hmmm...I could just shock the socks off of my dear brother and serve it up with sardines sometime!! Ha ha ha!! He gives my current recipe rave reviews, though, so maybe I shouldn't mess with a good thing! Chicken or corned beef... I should really try branching out a bit!

What can I say! I love my spinach and sardines which is a close relative to collards. I can eat a whole bag of spinach fried up with a can of sardines in mustard sauce all by my little one selfie in a one little sitting!

I love spinach! It's the sardines that are tying my stomach in a knot! But I bet it does taste good, or you wouldn't like it, sister of mine! Next time I come to visit, perhaps we should try it! (Am I brave, or what?!)

Actually, I must confess, I'm not sure if I've ever even tried sardines.
